I purchase all my tv and movie content through iTunes, and keep it all stored on a 2TB seagate external drive. Most of the time I just stream the content from my apple tv, only watching it from my computer when the apple tv / iTunes store has a fit (which isn't too often). Anyways my library grows GB's a week, and the initial plan was to end up getting a thunderbolt base for my hard drive and then a 2nd thunderbolt to daisy chain to it for expansion. It's all so expensive though! I'm not a professional video editor, I'm only using the extenal drive for HD playback. Can this be done without issues on a USB 2.0 drive?

Of course. Many keep media on external drives. While I prefer Firewire 800 to USB (2-3 times faster), you still shouldn't have any issues with USB.
