What are the springs like to open it. I have one from twelve south and I like it but man it's like trying to open the jaws of some animal trying to get it open and sticking in the iPad pro.

He has an iPad Pro 11. Never heard him complain about “the jaws”, always just that he likes it and has used it for many purposes. Only complaint is that it could be a little more portable.

After going through many different options over they years, I now use a monitor arm and a VESA tablet mount.
For the arm, I recommend using one of the cheaper ones that just has segments and no gas spring. The iPad isn't heavy enough to allow the gas spring to function correctly. You can't "float" the iPad at an arbitrary height and have to use it alway-the-way up or all-the-way down. And the all-the-way down position is tenuous and might pop all-the-way up on you.
Here is the one I use. I use only two of the three segments of the pole. You might not need something even that tall, so one of the cheaper, shorter options may be better.
I also only use one segment of the horizontal arm.
