I need the F12 in a DOS emulator app for Mac OS X. However; the key is automatically set to bring up the dashboard. Is there a way to change this?

Have you even looked in System Preferences?
Go to the "Keyboard" preference and select "Keyboard Shortcuts". Then click on "Dashboard & Dock".
