This has happened twice in 24 hours on two difference devices.

First my iPhone was acting a little sluggish, so I turned it off and it wouldn't turn on, nor did it stayed turned off to put it DFU mode. The black screen with the apple logo would appear. Until I finally restored it and lost a month of texts and pictures..

Then just now, I downloaded an app from cydia on my iPad.. When it went to reboot the same problem occurred. While plugged in I turned it off and a few seconds later it would turn back on not allowing me to reboot in cydia.

Any suggestions on if this happens again or do I just wait for the untethered jailbreak?

What he ^^ said! You need to boot via redsn0w just boot option if you are using a tethered jailbreak!
