Is there nobody on eBay selling a 'bricked' one or one with a cracked screen? Or one that's been wet?

    Cheers.

Not to be a dick, but have you ever even seen a dummy iphone in a store? Lots of other phone makers put dummy phones in stores, but even the 3rd party AT&T resellers that have an iphone either have a working model, or just posters. I haven't personally ever seen a dummy iphone on display, so that would probably mean apple hasn't made any for a store.
