MP 1,1-5,1 Fastest SSD for Mac Pro 2.1 (NVME? PCI?)

I have a Mac Pro 1.1 which I updated to a 2.1 with a firmware update, running Snow Leopard.
I am looking for a new hard drive but I am not sure which ones are compatible. I don't think NVME works, but what about PCI? What is the fastest SSD for this Mac?

Only AHCI PCIe drives will work for any macOS version before Sierra.
