Good day,

What would best the best software, best way or best practice to encrypt a file on OSX.

- By the Disk Utility and create an image?

If that is the only way, how to I make the size bigger? I can't seem to go over 100MB (and yes I do have the space). I replace the 100 with 1000 MB and it still doesn't do anything.

You can put it into a folder and then make a disk image based on that folder. There are various other programs like TrueCrypt or VeraCrypt.

Have you checked the resulting image in Finder? I easily made a 1000 MB image, it just took longer.
