I was wondering what's the difference between using FileVault 2 once OS X is installed and installing OS X on a partition that's formatted as "Max OS Extended (Journaled, Encrypted)"? Which is better for performance and security? Thanks!

I don't think the encrypted HFS+ volume is meant to be the main boot drive of your computer. With FV2 you can save the recovery keys with apple, with the other option I don't believe that is possible.
