Does the final match with the iOS GM?
Or should I restore/update my device to the final?

Final is exactly the same as GM (GM is the same as RTM - Release to manufacturing).

So you'll be fine 🙂 No need for restoring.

There has only ONCE in the iOS history been released a second GM because of a serious WiFi bug (iOS 4.2 I think).
