Some observations;
For taking notes in college, Omi Outliner is great. I think its bundled with the MacBook.
NeoOffice will do all your word processing, spreadsheets and presentations. MS Office is unnecessary unless you need a high level of collaboration with other students. NeoOffice works fine, but is a little slow to open.
Presonally I think the 150 for the black is a waste, but it's a matter of taste, so that's your call.
I wouldn't bother with the 120Gig HD. You're better off to get an external HD that you can backup your HD onto and also stare additional files. There really is no need to have all of your files with you at all times. The 200 that the upgrade would get a fine external firewire HD and some money left over for drinking.
Get the ram elsewhere. 500 for an upgrade to 2 gigs is insane. There are hundreds of threads here on getting ram from other suppliers.
A larger monitor for revision time would be handy. It can get wearing on the eyes staring at a smaller screen, so putting some cash into a display you could put in your room would be worth it. If you save on ram,hd and colour, you could get yourself a nice 20" screen.
Finally, congrats on your decision. You won't regret it.
