Is there a way to have Adobe just open the pdf file as a default. I thought it asked me this during the install but I still have to choose the program whenever I download a file.

Highlight a PDF and 'Get Info' (Cmd + I). Where it says "Open With" choose the application you want (I assume this will be either Preview or Acrobat) and then click "Change All".
