I've read the files on Firewire Target mode and understand how to intitiate it to transfer files from my old G4 to my new iMac 24" 2.8Mhz (when it arrives in a week or so). Although I've been using OS X for several now years and a cursory understanding of UNIX I haven't invested much time in understanding its differences vs the old OS which I was quite familar with dealing with, quirks and all, because I no longer handle Apple support issues at work and have better things to do at home.

My G4 has three disks in it:
    1) The orginal which now contains only OS9 stuff
    2) A second which contains three partitions, one of which has OS X 10.3.9 and std. apps in it, one with other applications, and a third with data
    3) A third with data

    1) When I connect the G4 in target mode will all three disks appear on the iMac Host?

    2) Can I just copy application files over to the new machine or should I reinstall / update from scratch? Is there any utility which finds / copies all of the supporting files?

Yes, "Migration Assistant" or something to that effect.
