Since the new uMBP have firewire, does this mean that we can use them as target disks (from another Mac)?

Main reason regarding upgrading firmware on an internal SSD. Since there are issues upgrading boot drive SSD's from a firmware CD, you could instead connect to another Mac via Firewire and show the SSD mounted as a drive and apply firmware (without having to open your uMBP fine another computer or PC to apply firmware and re-insert).

Make sensem(really geared to the SSD upgraders)...
