I just used time machine to back up my old imac because im getting a new one soon. I was wondering when I go to access that old information on the hard drive how does it work. Do i have to restore all that information on the computer or I can just go and pick the stuff I wanna restore to the new computer and the rest I can delete at any time or does it all have to be put on the new imac?

Any external drive you use with Time Machine is still an external drive. You can still access the data on it like you would any other drive: just plug it into the new Mac

Run the Migration Assistant on your new Mac, and it will allow you to selectively restore what you want.
