Does anyone use their Apple watch solely for fitness tracking? Is it possible to remove the stock apps like messages or whatever?

Sure. Recently, I published a study about the reasons for buying Apple Watches where I interviewed 50+ experts about it.

For me, it was a complete surprise that most of them (43) answered that the Apple Watch is an excellent fitness & health tracker. Most of them were not even fitness geeks.

Not what I asked but thanks for the self promotion. I know it's a great fitness tracker. I asked if I could delete all the apps except the clock and fitness.
 
Maybe Apple will get the watch to the point where you can delete apps like you can on the phone. One can hope. :)
I certainly to hope! The other stuff is flashy. I don't need to read my texts on my wrist but I love the Apple ecosystem and would love a very simplistic watch

If you go into My Watch App on the iPhone you can customise your Stock Apps by ticking Custom and switching off Show Alerts. Hope this helps.

My Watch is now set to receive No Alerts from Messages.

She wants to be able to pick and choose (if any) stock apps that are installed and shown on the phone, just like the iPhone.
 
You cannot remove the stock apps from the watch. You can eliminate notifications from them so that thye are silent unless you start them.
 
I want to delete every app except the clock and the fitness tracker.
Unlike you, I eff’ing hate the fitness tracking functions, but I share the desire to delete apps. All I want are Nike run club, clock, messages, maps, music, and phone. I’d probably still have an Apple Watch if this were possible.
