Launch day 9.22.17 ,My phone was not able to make calls when the iPhone was not in range. Did all trouble shooting by myself, with T-Mobile, and with Apple they were not able to fix it over the phone. It was escalated to Engineers at both companies.
Went into my Apple store (Saturday 9.23.17) to be seen immediately. They saw me, took about an hour with the watch/phone and ended up fixing it.
Ultimately what was happening was the phone was defaulting to Wi-Fi and this was blocking it from automatically switching to cellular when away from the phone. It's a "known" issue that will be fixed with OS update.(I lucked out my awesome store "Knew" this. They called Apple engineers while I was there at around 8:00pm)
This is the short version! Watch works as it should and calls from the same number as my phone.
Everything else works fine (so far!)
Tried to keep this brief. Ask what you like. This is an Apple Issue - NOT a T-Mobile issue is what I was told.
