How do I do the above without having to re-enter all the ID3 tags?
Why not just go FLAC > MP3 without an intermediate step?
If you lose tags and need to rebuild, including using filenames, Doug's AppleScripts for iTunes is a great resource for managing your iTunes tags and files.
Here are a few scripts that I've found particularly useful:
Append To Selected Tag v1.1
Artist to Album Artist v2.0
Clipboard to Lyrics Scripts v1.0.1
Clipboard to Multi-Tracks Lyrics v1.0
Filenames to Song Names
Gather Up the One-Hits v2.3
List MIAs v1.2
Move Files To Folder... v1.0
No Lyrics to Playlist v2.0
Proper English Title Capitalization
Remove n Characters From Front or Back v3.0
Replay Last Bit v2.0
Search/Replace Tag Text
This Tag, That Tag Scripts v2.0
Track Parser v1.3.1
Tracks Without Artwork to Playlist v3.3
Do it quickly in the 30 day trial and you will have no need to buy the software.
Get Max and go from FLAC to MP3.
I'd go from FLAC to Apple Lossless or MP4, if you need to use those files in iTunes, iPod etc.
