Flash drive app?

I just bought a Buffalo 8gb flash drive. And, while I've installed portable versions of Firefox, Mail, TrueCrypt, etc. I haven't found a suitable sub for iphoto and a word processor (that doesn't use X-11). I'll be using the drive cross platform. Any suggestions would be helpful, thanks, mj.
