I have an old iPod Touch that I'd like to use for listening to music while riding my motorcycle. So, I'm in need of thin headphones/earbuds that take up a minimum amount of room when wearing a snug motorcycle helmet. Does anyone have something specific to recommend, with perhaps a link?

It would seem that in-ear would be the thing. You could get noise-isolating, but that may seal out too much ambient noise. Perhaps AirPods?

If AirPods are comfortable for you, they may be just the thing. They do have a "low profile" and no wires to worry about. They fit like the wired EarPods, so you may be able to try them out before buying.
 
I would just suggest looking on Amazon. I have all of the Apple products (I am a tech reviewer) and I HATE AirPods and EarPods. They are so uncomfortable. Maybe it's just me, but I would rather wear $5 headphones from Walmart than AirPods. Hope this helped!

I use in ears for exactly this reason without any issues. Since the wind noise will reduce sound quality massively I would pick a rather inexpensive pair. You might want to check out SoundMagic PL11 on Amazon.

EDIT: I also use Comply foam tips. They offer incredible sound isolation which is maybe not ideal for city traffic since it blocks out most of the surroundings' noise. It never felt unsafe though I never got into hairy situations because of listening to music, and I ride daily.

Be aware that it might be illegal to wear headphones while riding/driving depending on where in the world you live, or if there is no specific law, you could be charged with driving without due care and attention. Even if that is not the case in your country, I suggest avoiding any noise isolation.
