Apparently it's possible to force rosetta mode, so you're running in emulation

Rosetta isn't emulation. On an M1 app, if the app is universal, the OS will try to run the ARM code by default. What that checkbox does is force a universal app to run the Rosetta translated X86 code. This would be appropriate if your universal app uses plug-ins that are X86 only (haven't yet made the jump to universal).
