Bluetooth usually takes care of that, no ?

It does in that I can hear the directions, but it doesn't in that the map on my car's display doesn't synchronize with the maps on my phone. It'd be super convenient driving for Lyft/Uber if you don't have to constantly look at your phone when you don't know where the rider wants to go, and just getting directions in general.

The dealer won't install 3rd party stereos. Any car audio place will do so. Stay away from having Best Buy do it though as they generally mess things up. I've personally had a bad experience with their install guys (they refuse to use certified installers as it would mean they'd have to pay them more) and know many others that have had issues there too.

Thanks for your suggestions. I am a little nervous to mess around with it, but I am sure I can find something that works. I actually don't really have any issues with the MyFord Touch system so I am not sure CarPlay is really worth the cost. We'll see though.

If you're fairly happy with it then I'd leave it be. Factory systems are usually fine these days. CarPlay is nice but not groundbreaking.

A couple of years down the line you can always install a new stereo that supports it when CarPlay gets better and your factory stereo gets older and less with the times.
