I have been using a 160gb external usb hd with windows and now have my new imac.

Although I can read my jpegs from the externalm it needs to be formatted for mac in order to write to it.

Can someone detail the steps to do this?

I am running leopard and am new to mac.

Best way to do this is open up Disk Utility (in the Applications/Utilities Folder) and format it from there.

Use HFS/HFS+ for the type of formatting... this is the Mac OS Extended format and what you want!
 
Goto your utilities folder, and click on disk utility.

Select your external drive from the list on the left, and then click on the Erase tab.

Select your format (keeping it for this mac, OS X Extended Journaled would be fine.)
