I've just received my new mac - I read somewhere it's a good idea to do a fresh install of OS X and customize it not to install some software and language packs.

Is it worth it?

Not really, unless it is a second-hand Mac.

Languages don't take up that much anyway if you have a 500GB or 1TB HDD.

You can use Monolingual to remove unwanted languages though.

And MRoogle to find lots and lots of similar threads.
