I have 3.0 b5 on the phone now. When I check for updates, iTunes says I have the current version.

Any ideas?

Hit restore. It will download the new firmware. While it's downloading, unplug your phone.

Then once it's done downloading, check for updates.
 
If you're a dev then go to the dev site and get the GM seed. It has the same build number as the final 3.0 release.
 
When I Restore, I get this error:

There was a problem downloading the iPhone software for the iPhone. The requested resources was not found.​
 
Just restore the phone in iTunes. If you get that "There was a problem downloading the iPhone software for the iPhone. The requested resources was not found." message, it just means the severs are busy, try,try, try again. It worked the second time for me and I had GM/beta 6.
 
Forget all that crazy downloading, changing file names and moving them all around stuff. If done with restore in iTunes, the file is automatically saved where it should be and you'll have no problem restoring it the next time around. Also no need to post "why did I loose all my cool app's when restoring with a bit torrent ispw file downloaded from the net 🙁"
