Why should I buy an Apple Watch without an iPhone?

Because the original purpose of the Apple Watch was to replace iPhone in the phone part, only the shareholders disagreed, and neither did the CDA.

Why would I want to throw 1200€ every 2 years for a 2007 device that in the meantime has become 2 times bigger, 2 times heavier, 3 times more expensive and has deteriorated enormously in sw and battery level?
Especially why should I do it when with an iPad I do everything that iPhone does 10 times better, if it wasn't that iOS and iPadOS are castrated by Apple to sell me iPhone?
Because iPad has a higher replacement rate than iPhones, and in the time I change an iPad I probably changed 3 or 4 iPhones.

Buy all of them to throw around so that you don’t have to walk across rooms to get a device.

You often need more than one at any given time. I’m responding to you on my iPhone, and watching a movie on my iPad Pro, while procrastinating on things on my Mac. I have AirPods Pro in my ears and Apple Watch measuring my biometrics.

Just about time. I only got an Apple Watch last year, but I was amazed how little handoff functionality it has. Especially with non iPhones…
I can somewhat control media playing on my iPhone, which is nice (when it works), but really, my iPhone is far more portable than my Mac. It would be tremendously more useful to control media playing on a Mac, which I mostly don’t carry in my pocket.
There was away to do that via the remote. But agree easier iPad and Mac audio control would help.

Exactly. This is what I want. I have an Ultra with cellular so I don't actually need a phone. Would much rather pair it with a Mac or iPad.
 
But, if I abandon the iPhone (which may happen in a year or two) then Google's Pixel watch looks very tempting indeed and as far as I can tell it can do all that I'd need of it. Being able to use an Apple watch yet carry an Android device might well mean me keeping the Apple watch, though.

Of course, I have no idea how widespread such sentiments are.

Pixel Watch is not a good device. So many bad reviews about it out there, as you'd expect with an early generation Google device.
 
Bring standalone Apple Watch with NO dependency on iPhone or any other device (except Mac). Add camera to take pictures, work as scanner (including Apple Live Text) and web browser like Safari to read QR codes. An extra bonus would be to connect it to the Mac. Then I am sold:

This would necessitate significant changes to the Health app.

This all turned out to be a waste of time, because I assumed that data was on iCloud, and could be read by other devices. It's not, it's all there on the iPhone, and any developer can tell you that a database synchronized between multiple clients is exponentially more complex than single-client databases.
Health data syncs through iCloud. I use two iPhones and two watches used interchangeably that collect step data into their respective iPhones. The steps data may differ between iPhones for a while, but usually tallies within a few days.
