Take a whole head (or two) of garlic, cut the top off to expose all the cloves inside, drizzle some olive oil and salt and pepper over it and put it (wrapped in tinfoil) in a 350 degree oven for about an hour. Meanwhile, put a stick of butter on the counter to warm to room temperature. When the garlic comes out of the oven, put it in the freezer for about 10 minutes so it's cool enough to handle, then squeeze all that yummy garlic goodness out into a small bowl. Mash lightly with a fork, then add softened butter and mix well.
Spread on a loaf of bread, top with some shredded parmesean cheese (the real stuff, not the crap from the green canister) and put under the broiler for a minute or two. DO NOT WALK AWAY! Things under the broiler will go from GBD (Golden Brown and Delicious) to blackened in less than 30 seconds.
Remove from oven and enjoy....

It depends on what's being served. With pasta and red sauce, definitely some nice dipping marinara is excellent. With BBQ, not so much.and who likes to have some simple marinara sauce for dipping??
i can go either way on the cheese.
