What apps you need depends on what you intend to do with it.
Eleven of your list hold no interest for me; and if I were to list the apps I use, many would be useless to you.

- LogMeIn Ignition (Completely control the computer on your devices screen)
- Mobile Mouse Pro (Use the screen as a track pad / keyboard to control PC
- GarageBand (Ultimate music maker)
- iMovie (Ultimate movie maker)
- Whats On? (TV Guide ;D)
- DropBox (Local Storage through WiFi)
- Find My iPhone (To find your stolen or lost iDevice, this is great if you cant remember where you put it in your house, it can play a sound until you find it lol)

Need for Speed: Shift is the best game I've played and I'm most looking forward to GarageBand.
I vote for Evernote, personally. Ubiquitous capture, ubiquitous access, powerful search, and optical character recognition for pictures is hard to argue with.
I like Simplenote on iOS devices plus Notational Velocity on the Mac a lot, but I wanted to save all different types of media and Simplenote wasn't cutting it.
Notes Plus Appears to be a highly rated note taking app. I'll wait till they have one of their price drops, looks like they're constantly playing with the price. And on their twitter page it looks like they purposely do one day .99 sales every so often. I'll just use some free sketch app for the time being.
Speaking of sketching, definitely going to get a stylus. Either the Targus one or boxwave. My parents have the popular pogo stylus and that thing sucks.
Netflix is the other one I'm looking forward to for ipad

Ones I have on iphone and looking forward to using on ipad are Simplenote and Evernote (Been gravitating towards Simplenote for most things but still use Evernote occasionally) and I made sure to grab up VLC while it was in app store so I can play mkv files. Twitter and a couple others I'm forgetting at the moment.
