So I already back up everything via iTunes. Should I do a full factory reset on my phone beforehand?

I don't know how to completely wipe out all the data on my phone.
 
Are you taking it into the Genius Bar for an issue you are having with the phone? If that is the case then you may not want to factory reset the phone. The genius will need the phone in its current state to see what the issue is.

If you are trading it in for upgrade, just go into Settings > General > Reset > Erase all Content and Settings. Or you can open iTunes, with iPhone plugged in and hit Restore Iphone when it shows up.
 
When I got my iPod touch 5 replaced they took it with all my information on it. Nothing has happened.

They should ask you to enter your password (if you have one) and erase all content and settings before swapping it to ease any privacy fears - I've had to do that when getting an iPhone 5, 4 and even 3GS replaced.

I trust apple with that kind of thing. If password means pass code, I did not have one.
