Whenever I invoke certain programs, such as iTunes, I get the following NAG
screen.

Naturally, when I go to SECURITY in system settings and go to ADVANCED in firewall, iTunes is already listed as being able to accept incoming network data.

So, how do I get rid of this NAG screen?

Have you modified the iTunes application? It sounds like the code is no longer signed, which can produce that dialog box. If this is the problem, you can reinstall iTunes or resign the application with your own certificate.
 
This is a known iTunes issue. Simply uninstalling/reinstalling iTunes should solve your problem (it did for me!). Just toss it into your Trash, then download from apple.com to reinstall.
