How do I do this?

I'm giving someone a Touch as a gift and I'd like to also give them some credits in the App/iTunes Store so they can buy some stuff for it. I have their iTunes Login and Password. Is there a way I can add credits to their account without having it save my credit card info?

buy an itunes card..... then you can either load it to their account yourself or give them the card to load onto their account....
 
You only need their email address to send an electronic gift card. You don't need their iTunes account information. When they receive the email, there will be a redemption code/link. When they redeem the gift while logged into their iTunes account, it will add credits to that account.

I think your concern was using your credit card for their iTunes account. You can use own iTunes account to buy the gift card (or, direct purchase, I think) - they don't get any of your account information.
