Is there any way to add the functionality of writing, saving and organizing notes in the Mail app (similar to Mail in Leopard). I saw the app Note-to-self, but it's extremely buggy.

Not currently, that I know of, but I'm pretty sure that a solution will become available in Spring '07 😛 .

You can sort of send mail to yourself without sending mail to yourself. Sort of. Start composing a message but don't send it. Instead, save as draft, then drag it from the drafts folder to your inbox or wherever you like. It's primitive but functional. (You have to drag it back into the drafts folder if you want to edit.)
