In Gmail settings in the POP/IMAP section you also have this. I'm not sure if Sync looks at the way these settings are set to.

Status: IMAP is enabled
Enable IMAP
Disable IMAP

When I mark a message in IMAP as deleted:
Auto-Expunge on - Immediately update the server. (default)
Auto-Expunge off - Wait for the client to update the server.

When a message is marked as deleted and expunged from the last visible IMAP folder:
Archive the message (default)
Move the message to the Trash
Immediately delete the message forever

Folder Size Limits
Do not limit the number of messages in an IMAP folder (default)
Limit IMAP folders to contain no more than this many messages

EDIT:

I stand corrected. Here is a chart on how the commands are handled.

Action on mobile device/client (e.g. iPhone/Outlook) Result in Gmail on the web
Open a message Mark a message as read
Move message to Starred Apply a star to the message
Move a message to a folder Apply a label to the message
Move a message to Spam Report a message as spam
Move a message to Trash Message will be archived.
Send a message Store message in Sent Mail
Delete a message in inbox Move that message to Archive
Delete a message from a folder Remove that label from the message
Delete a message from [All Mail] Move the message to Trash
Delete a message from Spam or Trash Delete the message permanently

Interesting thread. I had no idea that my exchange connect to Gmail was archiving messages instead of deleting them until now. I went in and purged all the unopened items in my archive. Hopefully this is fixed by Google soon.

It is done that way by (default) design. Why should Google change it?

It seems interesting that people still can't get rid of the folder paradigm in an email system for organization. I thought gmails label system was pretty good. One email can exist in multiple locations. To be honest I wish Microsoft would implement the label system versus folder.

I agree it is a good system and works well when only using google tools, however it doesn't play too well with others. The question is, does google share the workings of it, in order to allow others to code their clients to support it better?

Any way... today I have move back to Hotmail as I used that before and exchange works well. It was that or go to Android and I didn't want to give up my iPhone at the moment. Maybe Gmail will see me return if things get sorted.

I installed the Advanced IMAP Controls in Labs on my GMail accounts. Then in settings under "Labels" I unchecked "Show in IMAP" next to the All Mail folder, That takes care of the annoying double messages. If I need to access the All Mail folder I just do so from the website.

my less than perfect way to delete an inbox email is to go into all mail and delete the email there then go to trash and delete email again.... seems to work fine for me I don't have anything in archive when I log on to gmail site

That's IMAP - That has no effect on Exchange, that I was using.

Yeah that does work, but I don't want to add extra steps onto something that now just works simply for me now that I moved back to hotmail.
