I previously had my Gmail account set up on my iPhone as an Exchange account. However, after a few weeks of actual usage, I realized that when I would delete an email on my iPhone, it wouldn't actually move it to the trash on Gmail's servers - it would instead just move it out of my Inbox and into archive. This was a deal-breaker for me, so I reverted back to an IMAP setup.

However, I want to get back to my Push emails. Is there a way to setup Gmail Exchange so that deleting an email on my iPhone actually moves the email to the Trash???

Not that I have found. It's one reason I'm sticking with imap gmail on my iPhone.
