I recently got an iPhone 13 Pro and put the physical sim from my iPhone X into it. I subsequently "converted" to esim and removed the physical sim from my iPhone 13 Pro. My question is, if I return my iPhone 13 Pro, can I go back to my iPhone X using the physical sim?

You will have to talk to your carrier about that. Shouldn’t be an issue to get a physical sim activated but they’ll have to provide one. Usually you can’t activate a used sim.
 
So, in the end, on Sunday I did decide to return my iPhone 13 Pro. I put my physical SIM back into my iPhone X and no surprise it didn't work right off the bat. I called AT&T and explained my situation. The first rep asked for my IMEI and ICCID but got errors trying to reset it. I was put in touch with the "Expert Advanced Technical Support" which confirmed the same two IDs. Was warned that our call would likely get disconnected (which it was), to reboot my iPhone X and they would call back. And they did! Successfully walked me back to my old iPhone X with the original SIM and no trip to the AT&T store 50 miles away. :)
