Going from 6.7 to 6.9 ... will we notice an improvement?
 
I didn’t notice any significant difference from iPhone 12 Pro to iPhone 15 Pro, though the size change was smaller. Some people are very sensitive to refresh rate & think that the ProMotion is incredibly important; my guess is gamers (which I am not) so it made zero difference to me. I ended up giving the 15 Pro to my wife after a few months, and went back to the 12 Pro and again, didn’t notice any significant difference (sure, I see that the Dynamic Island is gone but it doesn’t impact my usage).

Long way of agreeing with @BugeyeSTI - you’ll have to gauge for yourself.
 
Coming from 14+, I am looking at how much larger the 16PM will be, I am now leaning towards the 16 Pro.

My hands are not that large and won't have to feel like I am using a phablet....

You should. Many people noticed it during the last increase, which was 11 Pro Max (6.5-inch) to 12 Pro Max (6.7-inch).

This time, the increase is even larger. The display area is going from 17 sq. inches to 18 sq. inches.

hopefully those new 18:9 aspect ratio videos (such as MKBHD) wont be cut off by the island anymore
Interesting.

I was thinking more about text. I like to use the Kindle app on the phone, and more screen real estate would be nice. But the dynamic island thing is an interesting angle.

Take an XS Max or 11 Pro Max and compare it to a 12 Pro Max or newer - it’s the same size difference of 0.2 inches.
11 Pro Max was 6.5“, 12 Pro Max and newer is 6.7“.
 
Yes it will be noticeable. It's a combination of thinner bezels and a physically larger iPhone.
