If you wanted to use a local SIM card once you arrive in Italy, you should request and unlock from AT&T. https://www.att.com/deviceunlock/client/en_US/termsAndCondition

If not, you can put the phone into Airplane mode and then turn on Wi-Fi and only use at Wi-Fi hotspots so you don't incur any expensive roaming charges.
