My Gold 5s mute switch is broken and I need to get it replaced. What are the chances the Genius Bar will have a replacement or will they have to order one for me?

This. At least in my experience. My local genius bar sets aside one of each model (new stock until they get service replacements).
Great experience at the Apple Store. They checked and luckily had 1 Gold 5s in store for genius bar appts. Was able to get it swapped out and again Apple customer service comes through
