The mini sits in a server cabinet so I am looking for a burner that can sit out of the way on the desk.

Any good suggestions for an external dvd and/or blu-ray player for the mac mini? The one apple puts out for the mac air which would work is only usb 2.0 and I not sure that could transfer information fast enough. Anything use firewire 400/800 or even thounderport? There is a LiCie one that uses firewire but it looks like something from the '90s.

Any suggestions?

There are a couple of interesting ones there but they are all usb2. Can usb2 really transfer data quick enough to prevent burning coasters?

I'm sorry, but I can't understand your comment. Almost all of their products are USB 2.0/FW400/FW800/eSATA. I simply cannot imagine how you can say "they are all USB".
