It's always a hard call. If you need the processing power now, then you should get it now. But it sounds like you need a bigger screen more than you need power. You have a pretty nice set up at the moment.
There are still problems with the G5s, such as audio noise which has the professional audio community up in arms at the moment.
Personally, I have resigned myself to wait until the dual 3GHz machines come, but my work doesn't tax the processor as much as what you do.
How about trying to get one of those refurbished dual-2GHz G5s? If I was in your situation, that would be an okay compromise for me.
