Grayscale display

Does anyone know how to switch the display to grayscale on OS X?
I know about the "Universal Access" option, but that slows down things like Expose. Is there any other way?

I suppose you could create a grayscale monitor profile. Not sure exactly how that would be done, though...

I know how to set the monitor to inverse colours.
