currently have the 660 installed with nvidia's web driver,

would be acquiring a 680 be a massive difference since osx actually has a proper driver for it?

and would just any 680 do? i have my eyes on a evga 680 2gb, would that be able to flash so i can boot from a different drive?

also i have a gtx 970, but i guess the 680 is the last card apple has a official driver for?

i mainly use it for editing but my brother uses it for gaming.

If it's the reference model than it should work. I was able to flash my EVGA 680 OC version with EFI and it works great.

As for the driver? Both Apple and nVidia provides driver. However if I am correct some of us are having issues with CUDA and driver version issues.

Also MacVidCards provides flashing services for 970 if you want to give it a try.

PS Pre-ordered the 980 Mac version from MacVidCards. Can't wait to pick them up coming Wednesday if the delivery date stays the same.

I have had no issues with any of the latest drivers at all on mine. If your EVGA card model number is on that list it should be fine, provided you flash it correctly.
