Guess I don't understand syncing

OK, I've got an ipod touch and recently got a refurbed ipad gen 1.

I want the two to be separate. I want the photos I select to be on the ipad to be only on the ipad and not the ipod touch. I want the apps I downloaded on the ipod touch to be on the ipod touch, not the ipad. Etc. Etc.

What happens is everything I put on one winds up on the other too. How do I keep them separate?

Under photos in iTunes you need to check only the albums/events you want synced for that particular device. Same goes for music, apps, and movies if you don't want them all synced to a device.
