The best thing to use to explain the gyroscope is an accelerometer, which the iPhone/iPod touch/iPad also has. An accelerometer detects the angle the device is being held in relation to the ground, which allows it to adjust the rotation of the display and is also what's responsible with games that involve moving the device around (like Super Monkey Ball). What the gyroscope does is it complements the accelerometer by also detecting when the device is moved forwards and backwards, as well as side to side. This creates even more possibilities with, say, games.

AirTunes (or, as it's now know, AirPlay) will let you listen to music that is on your computer (provided you're connected to the same Wi Fi network as said computer) from your iPod, without it having to actually be synced to the device via iTunes.
