Ok so I thought I remembered reading a while back where someone hacked a Beta backup to use to restore to the latest public version of iOS. Something like changing the identifier or something? Anyone remember this?
 
There's nothing to hack to go back to iOS 7 and use a backup;) unless your trying to keep the is data but why
 
People haven't been able to do it?

I tried to hack the .plist and iTunes told me the backup was corrupt. After I had restored to iOS 7. However the other method worked as I did an opt. Click update to 7.1.2 from 8.0 beta 2. I was kind of surprised it had worked
 
There is a way. Using ibackupbot and selectively pulling data off and changing a few plists. I've done it before.

By this I mean restoring an ios8 backup on an ios7 device
