Today I had my faulty iPhone replaced for a new one at the Apple store. Does this mean that now I have got another 1 year warranty from the date I got the replacement (so it will end on 26 July 2012), or will it be the date I originally bought it?

Still one year from original purchase date, or 30 days I believe if you had less than that remaining from your original purchase date. (Might be 90)
 
only if you didn't buy apple care for the original.

here's a scenario

- warranty expires August 15
- i go into the Apple Store on the 14th and i get the phone replaced
- now i have warranty until September 14th
- do i now have until September 14th to extend the warranty?

It would be 90 days not 30 ;)

As for when you can extend the warranty, personally I don't know for sure but I would almost certainly think you'd have up until the 90 days are over.
 
It probably took you longer to create this thread then it would to read the your Apple work order stating that your warranty is not modified.

I know we'll both probably get down voted for this, but I totally agree. I'm not sure why people think it will be quicker (or get more accurate information) on here than simply asking at the store or calling them.

The warranty continues where your old phone left off or 90 days within receiving replacement device (which ever covers you longer).
In cases where you pay a replacement fee, the warranty is 90 days.

my warranty expired on july 26
went in on 25 and got phone replaced
iphone warranty expires in august 13, 2012
no i did not have extended apple care or nothing when i got it replaced
