Haha....well, thanks to my impatience, I have a laptop that I did not want originally. I had ordered a 16" Max with 32GPU, 64GB RAM, and 1TB SSD. ETA was well into late December. After watching so many reviews of how even the basic model was good for video/photo editing, I was having regrets of ordering something that I would never use to its full potential.

Last night, I was just browsing Apple's website after checking the status of my order and I saw that a 16" Pro with 16GPU/16GB RAM/1TB SSD was available for pickup. I decided to cancel my order right at that time and ordered the "basic" version for pickup. I just picked it up about an hour ago so we shall see if this will be enough for me. I'm also happy that I'm saving $1200+. :). So, maybe an iPad Pro. :D
 
Give it a good whirl and see if it’s good for your use case!
Just from a quick test, I can see that this might be more than enough. I have:

Davinci playing in the background with 6 4K tracks
Capture One 21 with 18 RAW images open
Preview with 18 JPEGs open
Word open
Excel open
Chrome open with 7 tabs
Safari open with 2 tabs
Affinity Photo open with a photo
Messages open
Xcode has a project open but not doing anything
Citrix Viewer remoted to work PC

So far, memory usage is at 13.20GB with 500MB swap used. This test is very extreme and I will never have that many things open at once. Looks like this might work. Let's see how it goes for the next several days.

I'm thinking about doing something like this too and just saving a little more money towards my next upgrade. Currently have a 16"/24 core/32gb/1tb model that was around $3000+tax. Would save around $500 if I stay 16" or $700ish if going to 14"

I did the same thing. Ordered a 14” M1 Max with 24 GPU cores, 32GB ram, 2 TB SSD. Then picked up the M1 Pro, 16-GPU cores, 16 GB ram, and 1 TB SSD delivered from a local store and canceled the preorder.

A couple of weeks I’m and I’ve thrown all my usual Office workflows at it and nothing phases it. Tried adding a Windows 11 VM via Parallels On top of my workflow, open several gigs of email archives, a 40GB devonthink database. Memory pressure turned yellow but nothing slowed down.

I still haven’t heard fans. Spent the savings on a new desk and AirPods max.
 
Another downgrade here. I initially ordered a 14” M1 Max 10 CPU/24 GPU/32GB/1TB, but cancelled it and ordered an M1 Pro 10 CPU/14 GPU/16GB/1TB instead. I typically upgrade every 4-5 years (usually CPU motivated), and the reviews/benchmarks convinced me that this spec should be good enough for that. If the worst case scenario happens and I need 32GB RAM in 3 years from now, then I spent ~25% less for a 25% shorter useful life. If I end up getting 4-5 years out of it, then my cost of ownership was lower.
