Out of all the presets, which would be the best option for use across all Apple devices Apple TV, iPod Touch, and iPod Classic/Nano?

I have a huge DVD library of TV shows that I am putting into iTunes. I used the Hi res (640x480)iPod preset for Scrubs. It seemed logical seeing the show is 4:3 only anyway. How should I set it to handle other formats and movies?
 
for movies I care about I use this in the advanced settings:

I also set it to do 2 passes though I've been using turbo pass for the first pass. I've also set the bitrate to 3000 which is probably a bit on the high end.

The movies come out around 2gb which is probably too large for iPods. Cutting the bitrate would help on the file size.

For movies I don't care so much about or tv shows I use the appleTV preset but with the second pass enabled because I'm patient and like better quality when I can get at the same file size.
