About 5-6 years ago, I used to play a game with my kids, downloaded from an Apple Store, on retina intel iMac… it was similar to the old maze games (Monty?), a 2d platformer, you’re exploring an underground dungeon, collecting treasure, running away from spiders and such. If I remember correctly it looked very “red” with red bricks used. For the life of me using all the search tricks I have I can’t find a trace of it…

If so, it will be in your purchase (paid & free) history in the Mac App Store. Click your avatar at the bottom left of the Mac App Store to show your "Account" page. Scroll.
If you're sure it came from the App Store but it's not available for redownload then it sounds like it's been removed. Go to Account/Account Settings/Purchase History/See All and take a look in there. You'll need to change the filters to show older apps, free and paid, but if it's from the App Store then it'll show up in there somewhere.
Unfortunately I'm not able to find a trace of it... It is not that old - maybe 4-5 years old tops, I run it on my 27 inch retina imac, and I thought I got it from the app store. It was not a part of it, but very similar in style and game play to monty on the run there a character goes through horror creatures filled labyrinths and such. Anyone.... ?
The first thing that came to my mind when you first described it was Montezuma's Revenge, which is what I thought you meant by "Monty". Looking at screenshots, both look reasonably similar.
With the game you're looking for, do you remember whether it looks "retro" (with big pixels etc.) or whether it looks modern (just with classic gameplay)?
