After reading 'Paperless', I'm wanting regular access to Preview for making docs PDF's and other things.

I see no place in System Preferences to do this. I have a danged Adobe Reader that ALWAYS comes up by default, despite my wishes.

Where are PDF management preferences? How can I make Adobe Reader a secondary option?

Locate any PDF file in Finder, Right-click (or Control-click) on it and choose "Get Info". One of your options is "Open with" (you may have to click the triangle). Choose Preview in the pulldown box, then hit "Change All...".
