My goal is to use the Studio M2 as a replacement for Mac Pro 2010, fully upgraded. I'm currently doing a little bit of audio and video editing, but I mostly use the Mac Pro for development (Docker containers, etc.).

I believe M2 Max will suit my needs, the only difference I see is the front using two USB-C ports, instead of Thunderbolt 4 on M2 Ultra model. I also need to connect my two Dell 43inch HDMI screens, to the new Studio. For the first screen I can use the existing HDMI port, while for the second, I can use the USB-C Digital AV Multiport Adapter.

Can you please let me know if there is anything else I should look into, for my purchase? Thank you.

That’s a good run on that Mac Pro.

I went with the Max chip with 38 GPU cores (you need to pick that one if you want to max the RAM to 96GB which I wanted).

An Ultra is overkill for my needs which are mostly programming related, if you work with video/3D you’ll probably want the Ultra?

I hear you, I was looking forward to the new Mac Pro, but I think the price is way too high, just for the extra PCI cards. If I understand correctly, we cannot even use AMD GPUs. For now, I'll wait until Apple starts selling refurbished Studios M2, and pick one that suits my needs.
